In recent years, China's food hygiene and processing and preservation issues have attracted more and more attention. With the improvement of people's living standards, the requirements for food hygiene have become more and more strict. Especially for food processing enterprises, every production process has strict requirements. Ice-cold processing has become the main means of livestock and poultry slaughtering and food pre-cooling, meat processing and aquatic product processing.

Livestock and poultry slaughtering and food pre-cooling:

According to the national requirements, the temperature of the water in the spiral pre-cooling tank of the poultry slaughter should be controlled at 0 °C - 4 °C. The cooling of the water temperature by the chiller alone cannot meet the national requirements. Therefore, in the actual production process, a large amount must be added to the pre-cooling tank. The flake ice is used to control the water temperature; in addition, in the modern poultry processing (especially broiler processing) process, the carcass pre-cooling process must be iced to ensure that the temperature requirements are met (guaranteed the color of the bird and the taste of the meat).

The process of broiler chicken is as follows:

Hanging on the chicken → calm → (electric hemp) → slaughter → electric hemp → leach blood → scalding → hair removal → net 膛 → pre-cooling → split → packaging

From the whole broiler processing process, we can easily find that every step of the whole process requires strict time requirements and temperature control to ensure the quality of the product. Pre-cooling is the core of the entire process.

There is a pre-cooling zone in each poultry slaughtering plant. The pre-cooling zone is the area where the chicken body from the intermediate zone is disinfected and cooled. There are usually two types of pre-cooling, namely pre-cooling and pre-cooling. The early poultry processing plant used pool pre-cooling, that is, some refrigerating pipes were arranged in a rectangular pool, and the chicken body entered the pool through the catenary system and operated in the pool for about 40 minutes, which was characterized by good pre-cooling effect. Lower operating costs, but not conducive to sanitary cleaning. In recent years, most of the new poultry processing plants have adopted spiral pre-cooling machines. Although the operating cost is slightly higher than the pool type pre-cooling, it is easy to be hygienic and clean, which is conducive to ensuring the quality of chicken meat. The pre-cooling time should also be guaranteed at 35-40 min. Regardless of the method used, it is divided into two stages of pre-cooling. The first stage water temperature can be slightly higher. Add sodium hypochlorite disinfectant to the water. The second stage water temperature should be kept at 0-1 °C. In this way, the temperature of the pre-cooled chicken body is not higher than 8 °C. A spiral pre-cooler must be equipped with an ice machine.

The temperature of the divided packaging area is below 16 °C. The process flow is as follows:

Hang chicken → cut chicken tail → cut both sides → cut back → cut chest wing → scrape small meat → Lari muscle → cut soft muscle bone → cut leg → cut long skin → cut neck → pick neck.

After the chicken legs and the thorax wings are cut off, they are placed on the V-belt conveyor for manual rough division, and then sent to the workbench for fine division and packaging. Subdivided products are mainly based on market needs.

How to calculate the amount of ice used for processing and choose the corresponding ice machine? (Taking the medium snow cooling ice machine as an example)

The cooling capacity is based on the broiler slaughter production, and the required cooling capacity per chicken can be calculated.

E.g:

After the net sputum, the average mass of the chicken body is about 1.5kg.

The specific heat of the chicken body is taken at an intermediate value of 3.0 kJ/kg·°C.

The average temperature of the chicken before pre-cooling is 30 °C.

6°C after pre-cooling,

Then, the heat exchange amount Q = 3.0 × 1.5 × (30 - 6) = 108 kJ / only.

Therefore a 10000/h broiler processing line;

The cooling capacity required for the chicken body in the pre-cooling zone is 108×10000=1080000 kJ/h.

According to this cooling capacity, the manufacturer can select the area of ​​the corresponding ice machine or evaporation tube and the refrigeration unit. Calculated by the amount of ice M per hour: 1080000 = 2.1 × 5 × M + 336 × M + 4.2 × 1 × M then M = 3079. 55 kg.

(*The specific heat of ice is 2.1kJ/kg·°C, the temperature is -5°C; the specific heat of water is 4.2kJ/kg·°C, the latent heat is 336kJ/kg, and the temperature is kept at 1°C).

Calculating the amount of ice used per hour, it is not difficult to calculate how big the ice machine is. Calculated in normal eight-hour production:
